Diabetes Friendly Dessert Recipe - Fruit Cooler Cups

Ingredients:

  • 1 banana, peeled and chopped
  • 2 slices juice-packed canned pineapple, chopped
  • 1 cup sliced fresh strawberries
  • 3 8-ounce cans sugar-free orange soda
  • 1/4 cup shredded coconut

Directions:

  1. In a small bowl, combine the strawberries, pineapple, banana, and coconut.
  2. Spoon an equal amount into six 6-ounce paper cups. Pour 1/2 cup of the soda over the fruit in each cup and freeze until firm.
  3. Let stand at room temperature, to partially thaw, for a few minutes before serving.
