Diabetes Friendly Dessert Recipe - Brownie Sour Cream Cake

Ingredients:

  • 1 box (8 1/2 ounces) light chocolate cake mix
  • 1/4 cup fat-free sour cream
  • 1/3 cup Splenda® sweetener
  • 1 teaspoon vanilla
  • 1 egg white
  • 2/3 cup water
  • Non-fat, non-stick cooking spray
  • 1/4 cup mini dark chocolate chips
  • 1/4 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350 degrees F.
  2. In large bowl, combine cake mix, sour cream, sweetener, vanilla, egg white, and water. Mix with electric mixer until smooth.
  3. Coat 8-inch square glass baking dish with cooking spray.
  4. Pour batter into baking dish and sprinkle with mini dark chocolate chips.
  5. Bake at 350 degrees F for 30 to 35 minutes.
  6. Test center of cake with toothpick to check for doneness.
  7. (Optional) Sprinkle top of cake with walnuts.
