Diabetes Friendly Dessert Recipe - Brownie Sour Cream Cake
Ingredients:
- 1 box (8 1/2 ounces) light chocolate cake mix
- 1/4 cup fat-free sour cream
- 1/3 cup Splenda® sweetener
- 1 teaspoon vanilla
- 1 egg white
- 2/3 cup water
- Non-fat, non-stick cooking spray
- 1/4 cup mini dark chocolate chips
- 1/4 cup chopped walnuts (optional)
Directions:
- Preheat oven to 350 degrees F.
- In large bowl, combine cake mix, sour cream, sweetener, vanilla, egg white, and water. Mix with electric mixer until smooth.
- Coat 8-inch square glass baking dish with cooking spray.
- Pour batter into baking dish and sprinkle with mini dark chocolate chips.
- Bake at 350 degrees F for 30 to 35 minutes.
- Test center of cake with toothpick to check for doneness.
- (Optional) Sprinkle top of cake with walnuts.
