Diabetes Friendly Side Dish Recipe - Tropical Zest Fruit Salad

Ingredients:

  • 2 large navel oranges
  • 4 large bananas
  • 1 pint fresh strawberries
  • Grated zest and juice of 1 fresh lime
  • 1/4 teaspoon dried mint leaves

Directions:

  1. Peel oranges.
  2. Thinly slice each orange crosswise, then cut each slice in half.
  3. Peel and slice bananas.
  4. Rinse strawberries, remove the stems, and cut into halves.
  5. Grate lime peel to create lime zest. Then juice the lime.
  6. Combine lime zest, lime juice, and mint leaves.
  7. Arrange cut fruits in an attractive pattern in a large shallow serving bowl.
  8. Drizzle with lime mixture.
  9. Serve chilled.
